White Chocolate Cranberry Cookie Cups

Want to look like a pastry chef but spend a heck of lot less time in the kitchen? These White Chocolate Cranberry Cookie Cups look like they would take you HOURS to make but they're actually pretty quick to whip up! Start by making your cranberry jam and allow it to cool completely. (That's the longest part!) Once the jam is cooled you can start working on melting the white chocolate. The cookies can be premade or you can find your own butter cookie recipe (but we're going the simple route and using premade!) We don't all have a lot of time to spend in the kitchen especially during the holiday shuffle and bustle, right? Anyway, you can follow the rest of the directions below just know this is meant to be a high quality, low time dessert that makes you look like a pastry chef!

RECIPE

Ingredients

Cranberry jam:

  • 3 Cups Cape Cod Select Frozen Cranberries 
  • 1/2 cup water
  • 1 cup sugar

(There will be left over jam for you to save!)

  • Butter cookies (premade or make your own!)
  • 1 bag of White chocolate chips
  • 1 Tsp Coconut oil


Make the cranberry jam a few hours before to allow jam to cool completely. 
In a pot, pour your frozen cranberries, water and sugar.
Boil at medium high heat until the cranberries start to burst (about 5 minutes).
With a wooden spoon start to smash the cranberries and continue to stir for another 5 minutes or until it starts to thicken.
Remove from heat and allow to cool completely.

In a microwave safe bowl, melt your white chocolate chips and coconut oil.
Grab a silicone cookie mold mat and pour some white chocolate inside.
Make sure to coat the side walls with chocolate as well.
Place in a butter cookie and place in the refrigerator for 8 minutes or until the chocolate has hardened.

Remove from the refrigerator and add some cranberry jam inside.
Pour melted white chocolate on top of the cranberry jam.
Place back in the refrigerator to harden.
Remove chocolate cups and drizzle with white chocolate and garnish with cranberries.

Save leftover cranberry jam in the refrigerator to spread on toast or bagels! Enjoy!
