Cranberry Muffins

...with a little sparkling sugar on top!

When in doubt, bake muffins! Everyone loves a tasty muffin! Great for on the go breakfast, a mid day snack with a cup of coffee, or an after dinner treat.   • 2 eggs room temperature 
  • 1 cup white granulated sugar 
  • 1/3 cup vegetable oil 
  • 1 cup sour cream 
  • 2 3/4 cup all purpose flour 
  • 1 tsp baking powder 
  • 1 1/2 cup frozen cranberries
  • 1 Tbsp orange zest 
  • pinch of salt 
  • sparkling sugar for topping (optional) 

  • In a large bowl add eggs, sugar, vegetable oil, sour cream and mix together. 
  • Add siffted flour and baking powder.
  • Coat frozen cranberries (keep frozen) with a dash of flour and fold into the batter.
  • Add orange zest and salt, mix once more.
  • Scoop batter into prepared muffin tin with liners. 
  • Sprinkle sparkling sugar on top of each muffin. (optional)
  • Bake at 350F for 20-25min
  • Allow to cool and enjoy!
