HISTORY

One of the easiest and tastiest appetizers for any occasion, Cranberry Brie Bites! This recipe is brought to you by Duri Hussain of @imakeitspicy

RECIPE

Ingredients

  • 1 cup of Cape Cod Select frozen cranberries
  • 1/4 cup of honey
  • 1/2 cup of orange juice
  • Brie cheese
  • Puff pastry sheets, defrosted
  • Chopped nuts (e.g., almonds, pecans, or walnuts)
  • Sea salt


Prepare the Cranberry Chutney:

  1. In a saucepan, combine 1 cup of cranberries, 1/4 cup of honey, and 1/2 cup of orange juice. Heat the mixture until it's well combined and heated through.
  2. Add Cape Cod Select cranberries to the saucepan.
  3. Simmer the mixture over medium heat, stirring occasionally, until the cranberries have cooked through and the chutney has thickened slightly. This should take about 10-15 minutes.
  4. Remove the saucepan from heat and let the cranberry chutney cool to room temperature.

Prepare the Brie Bites:

  1. Cut the brie cheese into small bite-sized pieces.Place the brie pieces in the freezer to chill until you're ready to assemble the bites.

Prepare the Puff Pastry:

  1. Roll out the defrosted puff pastry sheets on a lightly floured surface. Cut the puff pastry into squares, making sure they are large enough to fit into your muffin pan.

Assemble the Cranberry Chutney Brie Bites:

  1. Preheat your oven to 400°F (200°C).
  2. Grease a muffin pan or use muffin liners.
  3. Place one puff pastry square into each muffin cup, allowing the corners to extend slightly over the edges.
  4. Add a chilled brie bite into the center of each puff pastry square.
  5. Top each brie bite with a spoonful of the homemade cranberry chutney. 

Bake:

  1. Place the muffin pan in the preheated oven and bake for approximately 20 minutes or until the puff pastry turns a light golden color and appears puffy.

Finish and Serve:

  1. Once out of the oven, garnish each Cranberry Chutney Brie Bite with a sprinkle of chopped nuts for a delightful crunch and a pinch of sea salt to enhance the flavors.
  2. Allow the bites to cool slightly before serving.
