Cranberry Vanilla Granola

HISTORY

When Chelsea Peachtree  reached out to us to create a cranberry recipe with our frozen cranberries and she mentioned a granoal recipe we jumped on it! We LOVE granola but so many recipes called for dried cranberries and we of course wanted a recipe with our frozen cranberries and Chelsea did just that! With no added sugar Chelsea slighty deydrated our frozen cranberries to create a still a bit juicy cranberry for the granola to add a burst of flavor. The Cranberry Vanilla Granola is a great snack on its own but so tasty over yogurt or baked fruit too! 

RECIPE

Ingredients

1 cup Cape Cod Select frozen cranberries

2 cups old fashioned rolled oats

½ cup whole almonds

¼ cup sunflower seeds

½ tsp cinnamon

¼ tsp allspice

¼ tsp sea salt

1 tsp vanilla extract

¼ cup maple syrup

¼ cup coconut oil

1 tbsp brown sugar

¼ cup dark chocolate chips



Place frozen cranberries directly on a baking sheet and bake at 150 degrees F for 6 hours to slightly dehydrate them (they will still be juicy). 

Preheat the oven to 300 degrees F

Place oats, almonds and sunflower seeds in a mixing bowl and mix until combined.

In a separate bowl, mix together the cinnamon, salt, all spice, vanilla, coconut oil, maple syrup and brown sugar.

Pour over the oat and nut mixture and mix until the dry ingredients are well coated.

Place parchment paper on a baking sheet and pour the granola mixture onto the parchment paper, spreading it out so it is a thin layer.

Place in the oven for 45 minutes, stirring every 15 minutes. 

Remove from the oven and let it cool completely. Mix in chocolate chips and semi-dried cranberries. Store in an airtight container in the fridge for up to 3 days.
