Corona & Cranberries

2020 is off to a strange and scary start with the CoronaVirus (COVID-19) pandemic. Many businesses have been forced to close, hospitals are over capacity, there’s a shortage of medical supplies, and there is a lot of uncertainty.

We’re considered an essential business as we are farmers and mother nature waits for no one. We are also a food manufacturer and supplier so we’ve been quite busy keeping stores stocked as demand skyrockets for superfoods and immunity boosting foods like cranberries. To stay operating in such a time however comes with significant changes to our daily routines. Office staff are working from makeshift home offices and the field crews are taking extraordinary new precautions while monitoring their health, distancing, and sanitizing frequently.

We are fortunate to be an essential business. We hope our friends in the service industries, as well as small business owners, and all other businesses that have been affected by this pandemic are doing ok. We look forward to visiting your businesses again when things are back to normal.

We wanted to take a moment to thank all of the health care professionals, grocery store employees, truck drivers, and all of the essential personnel that are keeping our country running. Your hard work is not going unnoticed.

While most are at home and trying to think outside the box to keep busy we thought we’d share a few of our favorite recipes! They’re simple recipes that we love and you likely have most of the ingredients at home!

Cranberry Squares

Ingredients:

• 2 Sticks Butter, melted
• 2 cups flour
• 2 cups sugar
• 3 eggs
• 2 tsp. Almond flavoring
• 3 cups Cape Cod Select frozen cranberries

Preheat the oven to 350 degrees. Whisk melted butter, eggs, and almond flavoring in a mixing bowl. Slowly add flour and sugar until a batter forms. Fold in 3 cups frozen cranberries until evenly distributed throughout the batter (batter is thick). Spray a 13x9 baking pan with cooking spray. Once prepared, spread batter evenly in the pan and bake for 1 hour or until edges are golden brown.

Allow to cool and serve!

Strawberry, Banana & Cranberry Smoothie Bowl

Strawberry, Banana and Cranberry Smoothie BowlIngredients:

• Half cup Cape Cod Select Frozen Cranberries
• Half Cup frozen strawberries
• 1 frozen banana
• Half cup almond milk
• 1 scoop vanilla protein (or half cup yogurt)

Blend all of the ingredients together in a blender. Mixture should be smooth but thick. Pour into a bowl and decorate the top with more cranberries, sliced banana, sliced strawberries, and whatever else you’d like! We like to add a little crunch with granola or pumpkin seeds!
