This recipe for Cranberry Orange Coolers was submitted into our 2016 Holiday Food Blogger Challenge by Ranae Frances of The Sunday Funday Blog. Don’t be fooled by the “holiday” decor pictured below because this drink is great by the pool too. It’s cool, refreshing and tastes delicious. 1 Cup Water
1 Cup Sugar
2 1/2 Cups Frozen Cranberries
1oz Cranberry Simple Syrup
2oz Orange Liqueur
1/4 Cup Orange Juice
For Simple Syrup:
In a medium sized sauce pan combine 1 cup sugar, 1 cup water, and 2 1/2 cups of Cape Cod Select Premium Frozen Cranberries. Allow the syrup to come to a boil, then simmer for for about 10 minutes. Strain the syrup through a fine mesh sieve, or cheesecloth, and allow it to cool before using.
Prepare your cup by rimming the glass with cranberry simple syrup and granulated sugar.
For 1 cocktail:
1 oz cranberry simple syrup
2 oz orange liqueur, such as triple sec
1/4 cup orange juice
Serve on the rocks, or blend with 1 cup of ice.
Garnish with Cape Cod Select Premium Frozen Cranberries and wedges of orange or mandarin orange slices.
